Ham Pot Pie



Filling

Ingredients:
  • 4 oz butter
  • 4 oz onion, small chop
  • 3 oz carrot, small slice
  • 3 oz celery, small chop
  • 1/3 cup AP flour
  • 2 cups vegetable broth
  • 1/2 cup frozen peas
  • 1/4 cup heavy cream
  • 8 oz ham, small chop
  • 1 tsp rosemary
  • 1/4 tsp black pepper
  • 1/8 tsp cayenne pepper
  • water as needed to thin filling
Directions:
  • butter in 9" skillet, hot
  • add onion, carrot, celery until onions translucent
  • add flour, stir, 2 minutes
  • add broth, stir until filling is thick
  • add ham, cream, seasonings, simmer for 10 minutes
  • (while simmering, add water to keep the filing not to thick)
  • add peas, stir, let it cool
  • (can refrigerate for an hour or so)

Hot Water Pastry

Ingredients:
  • 2 1/4 cup AP Flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 4 ounces butter
  • 1/2 cup plus 1 tbls water
  • 1 egg, 2 tsp cream, whip for wash
Directions:
  • preheat oven to 400F
  • large bowl, flour, salt, baking soda, mixed
  • pot of water and butter, just to melted
  • slowly add to flour, mix, knead well
  • made into 3 balls, split each ball to 40:60 balls
  • roll 60 ball to flat circle, place in a small bowl
  • place a third of the filling into bowl
  • brush some egg wash on edge of pastry
  • flatten the 40 ball to flat circle, over the bowl
  • pinch top to bottom, fork to pretty
  • cut slits in top to release steam
  • brush egg wash over the top
  • assemble two more small bowls
  • bake in over for 1 hour
  • Done
